Serves 4 (1 leg quarter per person)
Prep time: 2 mins (including marinating time - can be up to 24 hours)
Cook time: ~40 minutes
Ingredients:
- 4 chicken leg quarters
- 1/2 cup Elfassy Foods harissa (Hot or Mild - your choice)
- 3 tablespoons Dijon mustard
- 3 tablespoons honey
Instructions:
- Combine the harissa, mustard and honey; mix to make marinade
- Rub mixture all over the chicken leg quarters and Marinate in the harissa, Dijon, and honey mixture overnight in the refrigerator
- Remove from the fridge 20 mins before cooking
- Preheat your oven to 400°F
- Lay the chicken leg quarters covered in marinade on a greased baking sheet or wire rack and place in the middle of the oven
- Roast the marinated chicken legs in the oven at 400°F for 40 minutes or until the internal temperature is 165°F or the juices run clear.
Serve with roasted broccolini and mashed potatoes for a complete meal. Enjoy!
