Harissa Roasted Mixed Vegetables - Elfassy Foods

Ingredients:

  • 4 cups mixed vegetables (bell peppers, zucchini, red onion, carrots, cauliflower, broccoli), chopped or cut into florets
  • 3 tablespoons Elfassy Foods Harissa (Hot or Mild, your choice)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • Half a lemon (optional)
  • Fresh cilantro or parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine Elfassy Foods Harissa, olive oil, ground cumin, ground coriander, salt, and pepper. Mix well. Since Elfassy Foods Harissa has oil, cumin, and coriander - you could choose to use more harissa paste instead. Feel free to add a squeeze of lemon here as well, but save some for the end.
  3. Add the chopped mixed vegetables to the bowl and toss them in the harissa spice mixture until they are evenly coated.
  4. Spread the seasoned vegetables on a baking sheet in a single layer to ensure even roasting.
  5. Roast the vegetables in the preheated oven for 20-25 minutes or until they are tender and have a slightly charred appearance, stirring once or twice during roasting.
  6. Once roasted, remove the vegetables from the oven and transfer them to a serving dish.
  7. Squeeze the lemon over the chopped vegetables if desired. 
  8. Toss with additional harissa for a spicier side dish if desired.
  9. Garnish with chopped fresh cilantro or parsley if desired.
